It appears that chocolate companies want to start making chocolate without cocoa butter and still call it chocolate! Because they're cheap money-grubbing capitalist pigs! Exclamation point! I've had chocolate chips made this way (called chocolate flavored chips) and they sucked. I'm sure there will still be chocolate marketed with real cocoa butter, but it'll be buyer beware and most of what gets put into other things or maybe even served at some restaurants will be the crappy kind. I was going to just quietly absorb this with righteous indignation, until someone noted the relationship to one of the tangents on my melamine rant.
If nothing else, think of Hershey turning into the Budweiser of chocolate. Very sad.
